Stumbled upon another interesting discussion on the Food Trucks Subreddit that I think would pique you're interest. The Reddit post found here, is of someone asking if there is any way of obtaining a mobile food permit in an expedited time frame. He originally expected to have his mobile food business started in July, but found out that it could take a couple more months, pushing his opening back to August.

Are there any ways to expedite the permitting process for something like this? Do you have any insights or even experiences in regards to speeding up permit approvals in the food industry?

I know in some areas they offer expedited permit services for an additional fee, you could look into that. I would inquire directly with the department in regards to mobile food trucks.
